INGREDIENTS
1 1/4 cups of oats
1/2 cup of almonds
1/2 cup of brazil nuts
2 tablespoons of pumpkin seeds
1/4 cup of chia seeds
1 1/2 tbsp of coconut oil
1/12 tbsp of maple syrup
1 1/2 tsp of cinnamon
METHOD
1. Preheat your oven to 180°C. Pulse the nuts in a food processor until they are the size you want. I made my granola quite fine.
2. Move the nuts to a bowl and add the oats. chia seeds and pumpkin seeds.
3. Add the coconut oil, maple syrup and cinnamon to a small pan and heat until the oil has melted. Stir to combine the oil and syrup however it doesn't combine fully.
4. Add the oil mixture to the cry ingredients and stir until everything is evenly coated.
5. Line a tray and lay the granola out onto the tray. Put into the oven and stir regularly. Mine took 10-15 minutes to be done but if you want it crunchier/ have bigger chunks it may take longer.
6. Let it cool completely before transferring it to an airtight jar.
