GRACE PORTRAIT

My sister has started a music blog and radio show. So for her blog I drew her a portrait in my lazy was of simply tracing over an image on photoshop to create a line drawing. I added the texture of her fluffy coat and knitted scarf later on. I dread to think how long it too me as I did it in instalments. Annoyingly I didn't save it at various points of the drawing process but I did this at the texturising point so here it is.




PEANUT BUTTER CUP "ICE CREAM"

Last summer when I was on holiday I got slightly addicted to ben and jerry's peanut butter cup ice cream. I thought that I would try and make a healthier version to fuel my addiction. It's a shamefully easy recipe.

INGREDIENTS
2 frozen bananas
1tbsp of peanut butter
1tbsp of cacao nibs

METHOD

1. Peel and put the bananas in the freezer. Leave then there for at least 5 hours or overnight.
2. Put the bananas in a food processor and blend until chunky. Add tbsp of peanut butter and blend until smooth.
3. Sprinkle with cacao nibs and eat immediately.

VEGAN COOKIES

  These cookies are made out of almonds and coconut oil I normally put dark chocolate chips in them but today we didn't have any in the cupboard, they taste nice plain too. They are so easy to make and take a maximum of half and hour start to finish.I use dark chocolate chips but obviously they still contain dairy so mine aren't strictly vegan but I think the omission of the normal butter is more significant, I'm not too strict with myself. Obviously if you want to make these vegan then buy vegan chocolate chips or just omit the chocolate.
  It's easy to fall into the trap that because they are vegan/plant based then they must be healthy and to a certain extent this is try the hydrogenated fats of processed cakes and biscuits has been replaced here by healthy whole fats yet they are still only a healthier alternative to a treat so to eat all of them at once would still be bad. I am definitely guilty of that mentality!


INGREDIENTS

1 cup of rolled oats
2 cups of almonds
1/4 cup of coconut oil
1/2 cup of agave
4 tsp of vanilla essence
3/4 tsp of baking soda
1/2 tsp of xanthan gum
pinch of salt
(1 cup of dark chocolate chips if making chocolate chip cookies)

METHOD

1. Preheat oven to 180 degrees celcius.
2. Put the almonds into a food processor and pulse for 20 seconds. Add the oats and blend to create a chunky flour.
3. Add all of the dry ingredients to the bowl and stir.
4. Now add the wet ingredients and stir well.
5. Place a tablespoon of mix onto a baking tray and lightly push down on with hand to create a flat circle. The mixture is very loose so needs to be pressed together.
6. Bake for 6-8 minutes or until slightly golden brown but still soft.
